How It Works

This calculator follows the same logic a food-labeling lab would use, simplified for the home kitchen. The protein in your raw portion is calculated from the raw protein-per-100g value you enter. Not all of that protein survives the frying process as intact protein — some is lost in cooking juices and drippings, so a retention factor of 90–92% is applied depending on method. The cooked weight is then estimated from typical yield factors, which account for moisture loss and oil absorption. For example, a skinless chicken breast with no coating loses roughly 20–25% of its raw weight when pan-fried. A battered fish fillet, by contrast, can gain weight because batter and oil stick to the surface. If you enter the final fried weight yourself, the calculator uses that instead of the estimate, which removes most of the guesswork.

Formula: (raw protein per 100g × raw weight ÷ 100 × retention factor) ÷ cooked weight × 100 = grams of protein per 100g of fried food.

Worked Examples

Example 1 — Pan-fried chicken breast, no coating. Start with 150 g raw chicken breast at 22 g protein/100 g. Total raw protein = 33 g. Pan-frying retention = 90%, so retained protein = 29.7 g. Estimated cooked weight = 150 × 0.78 = 117 g. Protein per 100 g = 29.7 ÷ 117 × 100 = 25.4 g. The whole 117 g portion provides 29.7 g protein.

Example 2 — Deep-fried battered cod. Start with 120 g raw cod at 18 g protein/100 g. Total raw protein = 21.6 g. Deep-frying retention = 92%, so retained protein = 19.9 g. With batter, the yield factor is about 1.05, so cooked weight ≈ 126 g. Protein per 100 g = 19.9 ÷ 126 × 100 = 15.8 g. The batter and absorbed oil spread the same protein over more grams, which is why battered fish looks lower in protein per 100 g.

Factors That Change the Result

Three variables matter most. First, surface area and thickness: thin fillets lose water faster and pick up more oil relative to their weight. Second, coating: flour, breadcrumbs, and batter all add carbohydrates and retained oil, which lowers protein per 100 g even though the meat's protein content stays similar. Third, oil temperature: hotter oil seals the surface more quickly and absorbs less oil, while lower-temperature frying leads to greasier food. If you have a scale, weighing the cooked food after a one-minute rest on paper towel is the single best way to improve accuracy. This is especially useful for fried calorie tracking.

Frequently Asked Questions

Does frying destroy protein? High heat can affect some amino acids, especially lysine, but the total protein content stays largely intact. Our 90–92% retention factor is a practical estimate for home frying, not a measure of amino acid damage.

Why does the calculator show less protein per 100g for battered food? Batter and breading add weight from flour, starch, and oil, but they add relatively little protein. The same chicken protein is now diluted across a heavier portion, so grams of protein per 100 g drops.

Should I track protein raw or cooked? Choose one method and be consistent. Nutrition labels often list raw values, but if you meal-prep fried foods, the cooked value per 100 g is more representative of what you actually plate. This calculator handles both directions: raw weight plus estimated yield, or raw weight plus measured cooked weight.

Can I use this for air-fried food? Yes. Select air-fried to use lower oil uptake estimates. Because air fryers remove less moisture than deep frying, the per-100g protein value often lands between raw and pan-fried.
